Chicken and chorizo protein one pot recipe

Ingredients – serves 2

  • 300g/2 chicken breast (for two portions)
  • 10 tenderstem broccoli sprigs
  • 1 red + 1 yellow pepper
  • 150g green beans
  • Chorizo (as much as you want)
  • 2 tbsp tomato puree
  • 2 tsp coconut oil
  • Lime juice
  • Salt
  • Black pepper
  • Chilli
  • Cayenne pepper
  • Mixed herbs
  • Mature cheddar cheese (as much as you want, but maybe don’t go mad)
  • 6 tbsp full fat Greek yoghurt

Method

  1. Start by heating a teaspoon of coconut oil in a pan
  2. Cut the chicken into strips or chunks
  3. Add to the pan, and season with a pinch of salt, pepper, chilli and cayenne pepper
  4. Core the pepper and cut it into thin strips
  5. Trim the green beans and quarter the lime
  6. Slice the chorizo into chunks and add to the pan once the chicken starts to lightly brown. As soon as it softens, add all the veg, including the broccoli and the rest of the seasoning
  7. Once it softens, add the tomato puree and lime juice
  8. Stir until the puree forms a sauce. Cover the pan and cook for a few minutes
  9. After five minutes or so, add the yoghurt and cheese if desired
  10. Serve hot once the cheese melts
