DIY chicken chow mein takeaway

Homemade chicken chow mein

Chicken chow mein recipe

Ingredients – serves 4

  • Squeeze lemon
  • Salt and pepper
  • Red pepper flakes
  • 1 Tbsp olive oil
  • 300g diced chicken breast
  • 1 large carrot
  • 3 spring onions
  • Half a white cabbage
  • 1 Garlic clove
  • 1/2 cup (60g) frozen peas
  • 1/2 cup (60g) frozen sweetcorn
  • Quick corn noodles
  • 300g straight to wok noodles
  • Siracha sauce

Sauce

  • 2 Tbsp oyster sauce
  • 2 Tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tsp honey
  • 1 tsp cornflower
  • 1 tsp rice vinegar

Method

  1. Chop the carrot, spring onions and cabbage into slices
  2. Mix all sauce ingredients together, whisk, set aside
  3. Heat up oil in a wok and add diced chicken (buying pre-diced means less mess). Stir fry for around 5 minutes until chicken starts to brown
  4. Add one crushed garlic clove and fry for a further 5 minutes
  5. Mix in carrots, cabbage, spring onions, peas and sweetcorn
  6. Add straight to wok noodles or cook and drain pre-cooked egg noodles
  7. Go wild with some Siracha sauce
  8. Give the chow mein a good old mix (or toss the wok if you’re feeling brave)
  9. Enjoy!
