Fitness Flapjacks recipe

Ingredients – makes 24 small squares

  • 150g coconut oil
  • 120g blueberries
  • 110g soft dates
  • 50g jumbo oats
  • 100g rolled oats
  • 3 tbsp mixed seeds
  • 3 tbsp roasted hazelnuts
  • 3 tbsp dried cranberries
  • Drizzle of maple/golden syrup
  • 1 pinch of salt


  1. Preheat oven to 170ºC and line a baking tray with greaseproof paper
  2. Blitz coconut oil, blueberries and dates in a food processor
  3. Roughly chop the hazelnuts and add them to the mixture along with with dried cranberries, oats, seeds, nuts, dried fruit and salt and give it a mix
  4. Drizzle a generous dose of syrup
  5. Pour into the tray and press down flat (get right in there)
  6. Bake for 30 mins
  7. Cool for 10 mins
  8. Cut the flapjacks into squares
  9. Lay them on a cooling rack to set
